Sun-Dried Tomato Pork Chops and Asparagus








Here's the breakdown for the cost of this meal:
7 HUGE pork chops for $4, only used 4 for this meal
2 Red Potatoes (bought in bulk for 3lbs/$.99) $.25
1 White Onion (bought in bulk for 5lbs/$.99) $.20
1 8oz package of mushrooms $.99
1 3-4 serving pack of asparagus $2.25
Ken's Sun dried tomato dressing: Free with coupon!

4 5 servings for our family (the kids shared a chop, and the hubby brings a serving to work the next day).
Total for entire meal: $4.98
Total per serving (5): $.99
Not bad for a GREAT meal!

Put chops in bowl to marinate for at least 1 hour.

This is the "marinade" I used: Ken's Sun-Dried Tomato dressing. Free with sale/coupons!

Chop 1 white onion and 2 red potatoes into large chunks.

Place marinated chops into hot pan and cover.

I half-cooked the veggies in another pan until I could put them in the other pan once chops were done.

Add salt and pepper, to taste.

Let the chops soak up all of the marinate and carmelize.

Make sure it is thoroughly cooked. 165 degrees is my temp. They keep cooking once you take them off the heat, so it's okay to take them off at 155degrees.

Once the pork is cooked, put the veggies in the pan (keep chops in a warm oven). Let them soak up all of the carmelized goodness in the pan. Add the mushrooms about halfway through.

Steam asparagus for just a couple of minutes until tender. I put a tiny bit of water in my cast iron skillet, and covered for 3 minutes. Then removed from skillet. Place herb-infused butter on top.

There is your $.99 plate of food! It only took me about 35 minutes total to cook this, and that was mainly because I have a 2 year old and 4 year old! Simple!
