Dutch Oven Potatoes
I have been wanting a Dutch Oven for quite some time but couldn't get myself to spend that much. Well, there was a great deal on Amazon, so I grabbed one. Looking back, I should've grabbed TWO! My second dish made in this beautiful cookware was breakfast potatoes.
1lb bacon
12 medium potatoes, washed
1 large onion
8oz mushrooms, cut into 1/3rds
Parsley
Lawry's Seasoning salt
Fresh ground pepper
Cut bacon into large chunks. I cut the package into 1/6ths
Put bacon chunks into hot dutch oven to cook (I kept my gas range at 3 or 4)
Slice potatoes into rounds
Halve onion and cut into half rounds
Drain half the bacon grease into heat proof container
Add potatoes and onions to bacon
Add seasonings to taste and cover for 30 minutes, stirring occasionally.
Add musrooms and cover for another 30 minutes, stirring occasionally.
Do NOT overcook these potatoes. You want them to still be firm, but most of the "crunch" gone. I stirred in some cheese carefully as soon as I turned the heat off.
This will feed 15 people to the point of being stuffed. We had 10 people and everyone was happily full, with MANY leftovers to munch on throughout the day.
