Fried Rice





Here is my basic fried rice recipe. I cook in large amounts so we have leftovers, or freezer meals, so you can cut this in half to feed 4 or 5 people easily, with very few leftovers.

2 Tbsp oil
2 C. rice (I use basmati or jasmine for all of my rice)
1 Tbsp ginger
1 Tbsp coriander
fresh ground pepper
1Tbsp garlic powder
3 1/2 C. water
1/2 C. soy sauce
2 C. frozen vegetables (I used corn and peas for this recipe, but use what you like)
You can add 3 C. or so of diced chicken, pork, beef, shrimp, or tofu as well to make it a main dish.

Add oil to a medium pot and heat on medium heat, enough to make a strong sizzle when a drop of water is added.
Add rice to oil and spices, then brown (mine actually turns whitish)
After it's fried up, add in the water and soy sauce.
Let boil heavily for about 4 minutes stirring twice in that time.
Lower to a medium-low heat and cover for another 10 minutes or until almost done. I stir two or three times to keep it cooking evenly.
Remove from heat and set aside, covered, until ready to serve.
