Dice 2 large chicken breasts.
Cook in pan. I set it on medium for about 10 minutes. Stirring occassionally.
I love this cheese for any Mexican dishes I make.
Cheap large can of Enchilada sauce. Yum.
Thin coat on the bottom of the dish 9 x 13"
Layer tortillas to cover the bottom.
Roast chiles under the broiler (or use a grill if you have that option) until blistered. Then place in plastic bag for 5 minutes or more to steam. Peel skins off. *NOTE* Use rubber gloves while handling chiles...unless you enjoy the hot/cold/tingling burning that chiles cause on hands :) I ALWAYS make this mistake and whine afterwards hehe.
Cut chile, remove seeds, then dice.
Layer half of the chicken, chiles, black olives and 1/4 of the cheese (about 2oz or so) over the tortillas. Add 1/4 of the sauce.
Add another layer of tortillas to cover.
Follow layering step again. Add another 1/4 of the sauce
Add final layer of tortillas, last of the sauce, and add 8oz shredded cheese to the top. Bake at 350 degrees for about 25 minutes.
Simple, and SO delicious! Add any seasonings or any other fillings you enjoy with your enchiladas. We usually do onions, ground turkey (along with diced chicken), bell peppers (red or orange for color), etc. Also, add salt, chili powder, garlic, etc to your liking.
My husband wanted to show his plate. He made guacamole and had a bit of fideo on the side. And, of course, he adds Sriracha (a Chinese hot sauce) to everything he eats!

This is one of my favorite make-ahead meals. I put it all together and skip the oven part. I put the casserole dish in the freezer and save for a time we need a quick meal. It only takes about 40-60 minutes in the oven. GREAT for making before having a baby and then putting in the oven on those exhausting first days after baby is born. Or even moving...don't feel like cooking or getting take-out? Just pop this in the oven and you have dinner for your family and those who helped you move!
