Bell Pepper Eggs


So I don't have a quirky name for this recipe...all I know is it is AMAZING! And simple!
 
First, cut the middle section out of the bell pepper,

Slice into 3/4" thick slices to make enough height for the eggs.

I spray the pan with nonstick spray, then put about a Tablespoon of butter in the pan. Drop in an egg into each bell pepper ring (I didn't cut very evenly my first time, as you see).

Add pepper, salt, and anything else you put on your eggs, then cover to cook thoroughly.

After mostly cooked through, flip!

Add cheese over the top if you'd like, and pair with some fresh cooked sausage. Delish! I'm not a huge fan of eggs, but I eat the pepper eggs every morning. :) Can't get enough. Feel free to add other ingredients: onion, mushroom, etc. I just needed to make a quick sunday breakfast before we headed to Chuch. Enjoy!
