Coconut Rice


This goes together with curried lentils or any other dish with curry or a lot of chile pepper. The contrast of curry spices or spicy chile peppers is gorgeous.

You will need:
1 Tbsp. coconut oil
2 C. rice (I use basmati or jasmine for the fragrance)
1 can coconut milk
About 22oz water (I just fill up the can from the coconut water 1 1/2 times)


Add coconut oil to pot.
Stir in rice and cook until rice is evenly cooked.
Add in coconut milk and water.
Cover and simmer for 10 minutes.
Stir, the lower heat and cook for another 10 minutes, or until tender.
Remove from heat.
