How to Store Bulk Vegetables

I recieved a TON of produce. So I looked at these beautiful bell peppers in yellow, orange, red, and green and wondered what I could do with them. I decided to chop them all up, mix all of the colors, and vacuum seal them in 1- 1 1/4 cup portions. That way, when I wanted to have a bit of color in a dish, poof! Done! Here's the produce, and how the peppers turned out.
