If you're as white as I am, you've probably never even HEARD of fideo (fee-DAY-oh). My mother in law made it when I was pregnant with our first baby. I thought she was strange. Although, she made it more of a soup than a pasta. All it is is a short stick-like pasta. First, you heat some oil in the pan until it shimmers. Then toss in the fideo (and onions, peppers, or whatever else you'd like). Mix into the oil and stir until it's evenly brown. Next, toss in a small , 8oz, can of tomato sauce and about 12oz of water. I just fill the can once and then another half of a can, more if you want a soupy consistency. I mix everything together with some fresh ground pepper, put a lid on it, and let it simmer for 5 minutes or so. Once the liquid is almost gone, turn the heat off and let it set for another 2 minutes. It's a nice side to a Mexican dish. I've heard that it's an Asian dish as well, but I don't know from experience or research.
